Delicious and healthy vegetarian recipe with bell peppers stuffed with quinoa, beans and spices cooked in a crockpot.

Ingredients

  • 4 bell peppers
  • 1 cup quinoa
  • 1 can black beans, drained and rinsed
  • 1 can diced tomatoes with green chilies
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • 1/2 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup vegetable broth
  • 1/2 cup shredded cheese, optional

Instructions

  1. Cut off the top of each bell pepper and remove the seeds and membranes.

  2. In a bowl, combine the quinoa, black beans, diced tomatoes with green chilies, onion, garlic, chili powder, cumin, paprika, salt, and pepper.

  3. Stuff each bell pepper with the quinoa mixture.

  4. Pour vegetable broth into the bottom of the crockpot.

  5. Place the stuffed peppers in the crockpot, cover, and cook on high for 4 hours or on low for 6-8 hours.

  6. Sprinkle shredded cheese over the top and let it melt before serving.
