How To Make Grain-Stuffed Peppers

Who says vegetarians don’t get to enjoy savory meals? A taste of these authentic vegetarian recipes will make you change your mind. So, you just might want to go vegetarian after your first bite.

Ingredients

  • 4 bell peppers (any color)
  • 1 cup cooked quinoa
  • 1 cup cooked brown rice
  • 1/2 cup diced onion
  • 1/2 cup diced zucchini
  • 1/2 cup diced carrots
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped fresh parsley
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup grated Parmesan cheese (optional)

Instructions

  1. Preheat the oven to 375°F (190°C). Cut off the tops of the bell peppers and remove the seeds and membranes.

  2. In a large bowl, combine the cooked quinoa, cooked brown rice, diced onion, diced zucchini, diced carrots, diced tomatoes, chopped fresh parsley, garlic powder, dried oregano, salt, and black pepper. Mix well.

  3. Fill each bell pepper with the grain mixture, pressing it down lightly. Place the filled peppers in a baking dish.

  4. Sprinkle grated Parmesan cheese over the top of each pepper, if desired.

  5. Cover the baking dish with foil and bake for 30 minutes. Then, remove the foil and bake for an additional 10 minutes, or until the peppers are tender and the filling is heated through.

  6. Serve the grain-stuffed peppers hot and enjoy!
