Ingredients

  • 4 large bell peppers
  • 1 tbsp olive oil
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 1 lb ground beef
  • 1 can (14 oz) diced tomatoes
  • 1 can (14 oz) kidney beans, rinsed and drained
  • 1 tbsp chilli powder
  • 1 tsp cumin
  • Salt and pepper, to taste
  • 1 cup crumbled feta cheese
  • Fresh cilantro, for garnish

Instructions

  1. Preheat the oven to 375°F (190°C). Cut the tops off the bell peppers and remove the seeds and white membranes. Place the peppers in a baking dish.

  2. In a large skillet, heat the olive oil over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.

  3. Add the ground beef to the skillet and cook until browned. Drain any excess grease.

  4. Stir in the diced tomatoes, kidney beans, chilli powder, cumin, salt, and pepper. Bring to a boil, then reduce heat and simmer for 10 minutes.

  5. Spoon the chilli mixture into the bell peppers. Top each pepper with feta cheese.

  6. Bake in the preheated oven for 20-25 minutes, or until the peppers are tender and the cheese is melted and slightly browned.

  7. Serve the stuffed peppers hot, garnished with fresh cilantro.
