How To Make Chilli-stuffed peppers with feta topping

Ingredients
- 4 large bell peppers
- 1 tbsp olive oil
- 1 onion, diced
- 2 cloves of garlic, minced
- 1 lb ground beef
- 1 can (14 oz) diced tomatoes
- 1 can (14 oz) kidney beans, rinsed and drained
- 1 tbsp chilli powder
- 1 tsp cumin
- Salt and pepper, to taste
- 1 cup crumbled feta cheese
- Fresh cilantro, for garnish
Instructions

Preheat the oven to 375°F (190°C). Cut the tops off the bell peppers and remove the seeds and white membranes. Place the peppers in a baking dish.

In a large skillet, heat the olive oil over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.

Add the ground beef to the skillet and cook until browned. Drain any excess grease.

Stir in the diced tomatoes, kidney beans, chilli powder, cumin, salt, and pepper. Bring to a boil, then reduce heat and simmer for 10 minutes.

Spoon the chilli mixture into the bell peppers. Top each pepper with feta cheese.

Bake in the preheated oven for 20-25 minutes, or until the peppers are tender and the cheese is melted and slightly browned.

Serve the stuffed peppers hot, garnished with fresh cilantro.
