How To Make Healthy Halloween Stuffed Peppers

Ingredients
- 4 large bell peppers, any color
- 1 pound lean ground turkey
- 1/2 cup quinoa, cooked
- 1/2 cup black beans, drained and rinsed
- 1/2 cup corn kernels
- 1/2 cup diced tomatoes
- 1/2 cup shredded cheddar cheese
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- Salt and pepper to taste
Instructions

Preheat oven to 375°F (190°C).

Cut the tops off the bell peppers and remove the seeds and membranes. Set aside.

In a large skillet, cook the ground turkey over medium heat until browned. Drain any excess fat.

Add the cooked quinoa, black beans, corn, diced tomatoes, chili powder, cumin, salt, and pepper to the skillet. Stir well to combine.

Fill each bell pepper with the turkey and quinoa mixture. Place the filled peppers in a baking dish.

Sprinkle the shredded cheddar cheese on top of each pepper.

Cover the baking dish with foil and bake for 25 minutes.

Remove the foil and bake for an additional 10-15 minutes, until the peppers are tender and the cheese is melted and bubbly.
