Ingredients

  • 1 1/2 cups crushed peanuts
  • 1/2 cup flour
  • 1/4 cup sugar
  • 1/4 cup melted butter
  • 2 cups fresh strawberries, hulled and sliced
  • 1/2 cup sugar
  • 2 tablespoons cornstarch
  • 1/4 cup water
  • Whipped cream, for garnish (optional)
  • Fresh strawberries, for garnish (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).

  2. In a bowl, combine crushed peanuts, flour, sugar, and melted butter. Press the mixture into the bottom and sides of a 9-inch pie dish. Bake for 10 minutes, then set aside to cool.

  3. In a saucepan, combine sliced strawberries, sugar, cornstarch, and water. Cook over medium heat, stirring constantly, until the mixture thickens and the strawberries soften, about 5-7 minutes. Remove from heat and let cool slightly.

  4. Pour the strawberry filling onto the cooled peanut crust, spreading it evenly. Refrigerate for at least 2 hours to set.

  5. Serve the pie chilled, topped with whipped cream and fresh strawberries, if desired.
