Ingredients

  • 8 large eggs
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp olive oil
  • 2 cups fresh spinach, chopped
  • 1/4 cup grated parmesan cheese
  • 4 slices of bread
  • 2 tomatoes, sliced
  • Fresh basil leaves for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).

  2. In a bowl, whisk together the eggs, salt, and black pepper.

  3. Heat olive oil in a skillet over medium heat. Add the spinach and cook until wilted, about 3-4 minutes.

  4. Pour the whisked eggs over the spinach in the skillet. Sprinkle with parmesan cheese. Cook for 2 minutes, until the edges start to set.

  5. Transfer the skillet to the preheated oven and bake for 12-15 minutes, or until the eggs are set and slightly golden on top.

  6. While the eggs bake, toast the bread slices in a toaster or under the broiler until crispy.

  7. Top each toast with sliced tomatoes.

  8. Remove the baked eggs from the oven and let them cool for a few minutes. Cut into 4 portions.

  9. Serve the spinach baked eggs alongside the tomato toasts. Garnish with fresh basil leaves.
