Ingredients
- 8 large eggs
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp olive oil
- 2 cups fresh spinach, chopped
- 1/4 cup grated parmesan cheese
- 4 slices of bread
- 2 tomatoes, sliced
- Fresh basil leaves for garnish
Instructions

Preheat the oven to 375°F (190°C).

In a bowl, whisk together the eggs, salt, and black pepper.

Heat olive oil in a skillet over medium heat. Add the spinach and cook until wilted, about 3-4 minutes.

Pour the whisked eggs over the spinach in the skillet. Sprinkle with parmesan cheese. Cook for 2 minutes, until the edges start to set.

Transfer the skillet to the preheated oven and bake for 12-15 minutes, or until the eggs are set and slightly golden on top.

While the eggs bake, toast the bread slices in a toaster or under the broiler until crispy.

Top each toast with sliced tomatoes.

Remove the baked eggs from the oven and let them cool for a few minutes. Cut into 4 portions.

Serve the spinach baked eggs alongside the tomato toasts. Garnish with fresh basil leaves.
