- 4 sweet potatoes, peeled and cut into cubes
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon black pepper
- 1/2 teaspoon salt
- Fresh parsley, chopped (for garnish)
Instructions

Preheat the oven to 425°F (220°C).

In a large bowl, toss the sweet potato cubes with olive oil, minced garlic, black pepper, and salt until well coated.

Spread the seasoned sweet potatoes in a single layer on a baking sheet.

Roast in the preheated oven for 30-35 minutes, or until the sweet potatoes are tender and golden, stirring halfway through.
