  • 4 sweet potatoes, peeled and cut into cubes
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon black pepper
  • 1/2 teaspoon salt
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat the oven to 425°F (220°C).

  2. In a large bowl, toss the sweet potato cubes with olive oil, minced garlic, black pepper, and salt until well coated.

  3. Spread the seasoned sweet potatoes in a single layer on a baking sheet.

  4. Roast in the preheated oven for 30-35 minutes, or until the sweet potatoes are tender and golden, stirring halfway through.

  5. Remove from the oven and sprinkle with fresh parsley for garnish.

  6. Serve hot as a delicious side dish.
