How To Make Homemade Noodle Pot

Ingredients
- 2 cups all-purpose flour
- 1/2 teaspoon salt
- 2 eggs
- 6 cups vegetable or chicken broth
- 1 cup sliced mushrooms
- 1 cup chopped carrots
- 1 cup sliced bok choy
- 1 cup sliced bell peppers
- 1/4 cup soy sauce
- 2 cloves garlic, minced
- 1 tablespoon grated ginger
- 1 tablespoon vegetable oil
- Salt and pepper to taste
- 2 green onions, chopped
- Fresh cilantro for garnish
Instructions

In a large mixing bowl, combine the flour and salt. Make a well in the center and crack the eggs into it. Slowly mix the eggs into the flour until a dough forms.

Knead the dough on a lightly floured surface for about 5 minutes, or until it becomes smooth and elastic. Wrap the dough in plastic wrap and let it rest for 30 minutes.

In a large pot, bring the broth to a simmer over medium heat. Add the mushrooms, carrots, bok choy, bell peppers, soy sauce, garlic, and ginger. Cook for 10 minutes, or until the vegetables are tender.

Meanwhile, roll out the rested dough into a thin sheet. Cut the sheet into thin noodles.

In a separate pot, bring water to a boil and cook the noodles for 2-3 minutes, or until they are al dente. Drain and rinse the noodles under cold water.

Heat the vegetable oil in a large skillet over medium heat. Add the cooked noodles and sauté for 2-3 minutes, or until they are heated through.

Divide the noodles into bowls and ladle the hot broth with vegetables over the top. Garnish with green onions and cilantro.
