Ingredients

200g of dried noodles
2 cups of water
2 tbsp of vegetable oil
1 onion, diced
2 cloves of garlic, minced
1 red chili, sliced
1 carrot, julienned
1 bell pepper, sliced
200g of boneless chicken, diced
2 tbsp of soy sauce
1 tbsp of sriracha sauce
1 tbsp of tomato ketchup
1 tsp of sugar
Salt and pepper to taste
Spring onions, chopped (for garnish)

Instructions

Cook the noodles according to the package instructions. Drain and set aside.
Heat the vegetable oil in a large pan or wok over medium heat.
Add the diced onion, minced garlic, and sliced red chili. Sauté until fragrant.
Add the julienned carrot, sliced bell pepper, and diced chicken. Cook until the chicken is cooked through.
In a small bowl, mix together the soy sauce, sriracha sauce, tomato ketchup, sugar, salt, and pepper.
Pour the sauce over the cooked chicken and vegetables. Stir well to coat everything evenly.
Add the cooked noodles to the pan and toss to combine with the sauce and vegetables.
Cook for an additional 2-3 minutes until everything is heated through.
Serve the spicy pot noodle hot, garnished with chopped spring onions.
