Ingredients

  • 4 salmon fillets
  • 1 lemon, sliced
  • 4 sprigs of fresh dill
  • 4 tablespoons of mayonnaise
  • 1 tablespoon of fresh dill, chopped
  • 1 tablespoon of fresh parsley, chopped
  • Salt and pepper, to taste

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. Lay out 4 large pieces of aluminum foil.

  3. Season the salmon fillets with salt and pepper on both sides. Place one fillet on each piece of foil.

  4. Top each fillet with lemon slices and a sprig of fresh dill.

  5. Fold the foil to seal the edges, creating a tightly sealed packet.

  6. Place the foil packets on a baking sheet and bake for 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork.

  7. Meanwhile, in a small bowl, mix together the mayonnaise, chopped dill, and parsley.

  8. Serve the foil-poached salmon hot, topped with a dollop of herby mayo.
