How To Make Chickpea Curry

Ingredients
- 2 cups cooked chickpeas
- 1 onion, diced
- 2 cloves of garlic, minced
- 1 inch ginger, grated
- 1 can (14 oz) diced tomatoes
- 1 can (14 oz) coconut milk
- 2 tablespoons curry powder
- 1 teaspoon cumin powder
- 1 teaspoon turmeric powder
- 1 teaspoon paprika
- Salt and pepper to taste
- Fresh cilantro, for garnish
- Cooked rice or naan, for serving
Instructions

In a large pan, heat some oil over medium heat. Add the diced onion and cook until translucent.

Add the minced garlic and grated ginger to the pan and cook for another minute.

Stir in the curry powder, cumin powder, turmeric powder, and paprika. Cook for a few minutes, until fragrant.

Add the diced tomatoes and coconut milk to the pan, and season with salt and pepper.

Bring the mixture to a simmer and cook for about 15 minutes, until the flavors have melded together.

Add the cooked chickpeas to the pan and simmer for another 10 minutes, until the chickpeas are heated through.

Serve the chickpea curry over cooked rice or with naan bread. Garnish with fresh cilantro.
