How To Make Vegan Chickpea Curry Jacket Potatoes

Ingredients
- 4 large baking potatoes
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves of garlic, minced
- 1 tablespoon curry powder
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon turmeric
- 1/2 teaspoon paprika
- 1 can (15 ounces) chickpeas, rinsed and drained
- 1 can (14 ounces) diced tomatoes
- 1/2 cup vegetable broth
- Salt and pepper, to taste
- Fresh cilantro, for garnish

Preheat your oven to 400°F (200°C). Scrub the potatoes and prick them all over with a fork. Place them on a baking sheet and bake for 45 minutes to 1 hour, until tender.

While the potatoes are baking, heat the olive oil in a large skillet over medium heat. Add the diced onion and cook until softened, about 5 minutes. Add the minced garlic, curry powder, cumin, coriander, turmeric, and paprika. Cook for an additional 2 minutes until fragrant.

Stir in the chickpeas, diced tomatoes, and vegetable broth. Season with salt and pepper to taste. Simmer for 10 minutes to allow the flavors to meld together.

Remove the potatoes from the oven and carefully slice them open. Fluff the insides with a fork. Spoon the chickpea curry over the potatoes and garnish with fresh cilantro.
