  • 2 tablespoons vegetable oil
  • 1 onion, diced
  • 3 cloves of garlic, minced
  • 1 tablespoon ginger, grated
  • 2 teaspoons curry powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon turmeric
  • 1/4 teaspoon cayenne pepper (optional)
  • 2 sweet potatoes, peeled and cubed
  • 1 can (15 ounces) chickpeas, drained and rinsed
  • 1 can (14 ounces) diced tomatoes
  • 1 cup vegetable broth
  • 1/2 cup coconut milk
  • Salt, to taste
  • Fresh cilantro, for garnish


  1. Heat the vegetable oil in a large pot over medium heat. Add the onion, garlic, and ginger. Cook until the onion is translucent and fragrant, about 5 minutes.

  2. Add the curry powder, cumin, turmeric, and cayenne pepper (if using). Stir to coat the onion mixture with the spices.

  3. Add the sweet potatoes, chickpeas, diced tomatoes, vegetable broth, coconut milk, and salt. Stir well to combine.

  4. Bring the mixture to a boil, then reduce the heat to simmer. Cover the pot and let it cook for about 20-25 minutes, or until the sweet potatoes are tender.

  5. Taste and adjust the seasonings if needed.

  6. Serve the curry hot, garnished with fresh cilantro. It can be enjoyed on its own or served with rice or naan bread.
