How To Make Classic Victoria Sandwich

Ingredients
- 200g self-raising flour
- 200g unsalted butter, softened
- 200g caster sugar
- 4 medium eggs
- 1 tsp vanilla extract
- Raspberry jam
- Whipped cream
- Icing sugar, for dusting
Instructions

Preheat the oven to 180°C (350°F). Grease and line two 20cm (8-inch) sandwich tins.

In a large mixing bowl, cream together the butter and sugar until light and fluffy.

Beat in the eggs, one at a time, adding a little flour with each addition.

Stir in the vanilla extract, then fold in the remaining flour until well combined.

Divide the mixture equally between the prepared tins and smooth the tops.

Bake in the preheated oven for 20-25 minutes or until golden and a skewer inserted into the center comes out clean.

Allow the cakes to cool in the tins for 5 minutes, then transfer to a wire rack to cool completely.

Once cooled, spread one cake with raspberry jam and the other with whipped cream.

Sandwich the cakes together, jam side up. Dust with icing sugar before serving.
