Ingredients
- 4 medium-sized beetroots, cooked and cubed
- 200g feta cheese, crumbled
- 300g asparagus spears, trimmed and blanched
- 2 tablespoons extra virgin olive oil
- 1 tablespoon balsamic vinegar
- Salt and pepper to taste
- Fresh basil leaves, torn (for garnish)
Instructions
- 
In a large bowl, combine the beetroot cubes, crumbled feta cheese, and blanched asparagus spears. 
- 
Drizzle the extra virgin olive oil and balsamic vinegar over the salad. Season with salt and pepper. 
- 
Toss gently to evenly coat all the ingredients. 
- 
Transfer the salad to a serving platter or individual plates. 
- 
Garnish with torn basil leaves. 
- 
Serve the salad immediately and enjoy!
