How To Make Potato Pancakes with Chard & Eggs

Ingredients
- 4 medium potatoes, peeled and grated
- 1 small onion, grated
- 2 tablespoons all-purpose flour
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil, divided
- 4 cups chard, chopped
- 4 eggs
Instructions

In a large bowl, combine grated potatoes, grated onion, flour, salt, and pepper. Mix well to combine.

Heat 1 tablespoon of olive oil in a large skillet over medium heat. Drop spoonfuls of the potato mixture into the skillet, flattening them with a spatula to form pancakes. Cook for 4-5 minutes on each side, until golden brown and crispy. Remove from skillet and set aside.

In the same skillet, heat the remaining olive oil over medium heat. Add the chard and cook until wilted, about 3-4 minutes.

In a separate non-stick skillet, fry the eggs to your desired doneness.

To serve, place a potato pancake on each plate, top with sautéed chard, and finish with a fried egg on top.
