  • 8 large eggs
  • 1/4 cup heavy cream
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp unsalted butter
  • 1 large garlic clove, minced
  • 4 cups packed fresh spinach
  • 1/2 cup crumbled feta cheese


  1. In a large bowl, whisk together the eggs, heavy cream, salt, and pepper.

  2. In a large nonstick skillet over medium-high heat, melt the butter.

  3. Add the garlic and sauté for 1 minute.

  4. Add the spinach and sauté until wilted, about 2 minutes.

  5. Pour the egg mixture over the spinach and stir until scrambled, about 3-5 minutes.

  6. Add the crumbled feta cheese and stir until melted. Serve hot.
