Ingredients

  • 4 low carb wraps
  • 6 eggs
  • 1/4 cup diced onion
  • 1/4 cup diced bell pepper
  • 1/4 cup diced mushroom
  • 4 slices crispy bacon
  • 1/2 cup shredded cheddar cheese
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. Preheat oven to 350°F.

  2. In a skillet, heat olive oil over medium heat.

  3. Add diced onion, bell pepper, and mushroom. Cook for about 3-4 minutes until the veggies get tender.

  4. In a bowl, whisk the eggs, salt, and pepper together.

  5. Add the egg mixture to the skillet and scramble until the eggs are fully cooked.

  6. Divide the egg mixture among the low carb wraps.

  7. Top with crispy bacon and shredded cheddar cheese.

  8. Roll the burritos and place them on a baking sheet.

  9. Bake for about 10 minutes until the cheese is melted and bubbly.
