How To Make Coconut Curry Chicken Recipe
A spicy and creamy chicken curry dish made with coconut milk and fragrant spices.
Serves:
Ingredients
- 4 chicken thighs, boneless and skinless
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 red bell pepper, chopped
- 1 tsp ginger paste
- 1 tsp curry powder
- 1 tsp cumin powder
- 1 tsp coriander powder
- 1 tsp turmeric powder
- 1/2 tsp red chilli flakes
- 1 can of coconut milk
- 2 tbsp vegetable oil
- Salt and pepper to taste
- Fresh coriander leaves, chopped (optional)
Instructions

Heat the oil in a pan over medium heat.

Add the chopped onion, garlic, and ginger paste. Sauté for 2-3 minutes until the onion is soft and translucent.

Add the chicken and stir to coat it with the onion mixture. Cook for 5 minutes or until the chicken is browned.

Add the chopped red bell pepper, curry powder, cumin powder, coriander powder, turmeric powder, and red chilli flakes. Mix well.

Pour in the can of coconut milk, stir, and bring to a boil.

Reduce the heat to low and let simmer for 20-25 minutes or until the chicken is tender and the curry is thickened.

Season with salt and pepper to taste.

Serve the curry hot, garnished with chopped coriander leaves if desired.
