How To Make Lemon Pepper Chicken Stir-Fry

Ingredients

  • 1 lb. boneless, skinless chicken breast, sliced thin
  • 1/4 cup all-purpose flour
  • 1/4 tsp black pepper
  • 1/2 tsp salt
  • 2 tbsp olive oil
  • 1 tbsp minced garlic
  • 1 red bell pepper, sliced thin
  • 1 green bell pepper, sliced thin
  • 1 red onion, sliced thin
  • 1/4 cup chicken broth
  • 2 tbsp lemon juice
  • 1/4 cup chopped fresh parsley

Instructions

  1. Mix the flour, black pepper, and salt in a shallow dish.

  2. Dredge the chicken in the flour mixture, shaking off any excess.

  3. Heat the olive oil in a large skillet over medium-high heat.

  4. Add the chicken and garlic to the skillet and cook for 5-6 minutes or until golden brown and cooked through.

  5. Remove chicken from skillet and set aside.

  6. Add the bell peppers and onion to the skillet and cook over medium-high heat for 3-4 minutes or until tender.

  7. Add the chicken broth and lemon juice and bring to a boil.

  8. Reduce heat and simmer for 2-3 minutes or until the sauce thickens.

  9. Return the chicken to the skillet and stir in the parsley.

  10. Serve hot with rice or noodles.
