How To Make Chipotle Lime Chicken Fajitas Recipe

Spicy, tangy and full of flavor, these chicken fajitas are perfect for a quick weeknight meal or entertaining guests.

Ingredients

  • 1 lb boneless, skinless chicken breasts, sliced into strips
  • 1 tbsp olive oil
  • 1 tbsp chipotle in adobo sauce
  • 2 limes, juiced
  • 1 red onion, sliced
  • 3 bell peppers (any color), sliced
  • 2 garlic cloves, minced
  • Salt and pepper
  • Flour or corn tortillas, for serving
  • Optional toppings: shredded cheese, sour cream, jalapenos, fresh cilantro

Instructions

  1. In a bowl, mix together olive oil, chipotle in adobo sauce, lime juice, garlic, salt, and pepper.

  2. Add chicken strips and coat well. Marinate for at least 10 minutes.

  3. In a large skillet, heat some oil over medium-high heat. Add chicken and cook until browned and cooked through, approximately 5-7 minutes.

  4. Remove chicken and set aside.

  5. In the same pan, add sliced onion and peppers. Cook for 5-7 minutes, until tender but still firm.

  6. Add chicken back to the pan with the vegetables and stir together.

  7. Serve in tortillas with optional toppings.
