  • 1/2 cup all-purpose flour
  • 1/4 cup almond flour
  • 1/4 tsp baking powder
  • 1/4 tsp baking soda
  • 1 tbsp poppy seeds
  • 1/4 cup honey
  • 1/4 cup non-fat greek yogurt
  • 1 egg
  • 1 tbsp lemon zest
  • 1 tbsp lemon juice
  • 1/4 tsp vanilla extract

Instructions

  1. Preheat the oven to 350°F.

  2. In a mixing bowl, combine all-purpose flour, almond flour, baking powder, baking soda, and poppy seeds.

  3. In another mixing bowl, beat egg with honey until creamy, then add greek yogurt, lemon zest, lemon juice, and vanilla extract.

  4. Combine dry and wet ingredients until well mixed.

  5. Pour the batter into a lined and greased 6-inch cake pan.

  6. Bake in the oven for 22-25 minutes or until a toothpick inserted in the center comes out clean.

  7. Allow the cake to cool in the pan for 5 minutes before removing and placing it onto a wire rack to cool completely.
