  • 1 cup all-purpose flour
  • 1/4 cup Stevia or any sugar substitute of your choice
  • 1/4 cup unsweetened applesauce
  • 1/4 cup fresh lemon juice
  • 2 tbsp lemon zest
  • 1/4 cup unsweetened almond milk
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt

Instructions

  1. Preheat oven to 350°F.

  2. In a mixing bowl, combine flour, baking powder, baking soda, and salt.

  3. In a separate bowl, whisk together Stevia, applesauce, lemon juice, lemon zest, and almond milk.

  4. Gradually add the dry ingredients to wet ingredients and stir until smooth.

  5. Pour the mixture into a greased cake pan and bake for 30 minutes or until the cake is golden brown.

  6. Let the cake cool before serving.
