  • 1/2 cup almond flour

  • 1/4 cup monkfruit sweetener
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 1 egg
  • 1/4 cup melted coconut oil
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F.

  2. In a mixing bowl, combine almond flour, cocoa powder, monkfruit sweetener, baking soda and salt.

  3. In a separate bowl, whisk together egg, melted coconut oil, and vanilla extract.

  4. Mix wet ingredients into the dry ingredients, stirring until dough forms.

  5. Roll dough into small balls and place on a lined baking sheet.

  6. Bake for 8-10 minutes.

  7. Allow cookies to cool before serving.
