  • 1/4 cup unsalted butter, softened
  • 1/2 cup monk fruit sweetener
  • 1 egg
  • 1 tsp vanilla extract
  • 1 1/2 cups almond flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup chopped walnuts

Instructions

  1. Preheat oven to 350°F and line a baking sheet with parchment paper.

  2. In a mixing bowl, beat the butter and monk fruit sweetener until creamy.

  3. Add in the egg and vanilla extract, and beat until smooth.

  4. Mix in the almond flour, baking soda, and salt, and beat until well combined.

  5. Stir in the chopped walnuts.

  6. Scoop spoonfuls of the dough onto the prepared baking sheet, spacing them about 2 inches apart.

  7. Bake for 12-15 minutes, or until golden brown.

  8. Allow the cookies to cool on the baking sheet for about 5 minutes, then transfer them to a wire rack to cool completely.
