How To Make Diabetic Snickerdoodle Cookies Recipe
Classic cinnamon sugar cookie with a healthier twist for those with diabetes.

Ingredients
- 1/2 cup unsalted butter, softened
- 3/4 cup erythritol
- 1 egg
- 1/2 tsp vanilla extract
- 1 1/2 cups almond flour
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1 tsp cinnamon
- 1/4 cup erythritol (for coating)
Instructions

In a mixing bowl, cream butter and 3/4 cup erythritol.

Add egg and vanilla; mix well.

In another bowl, combine almond flour, baking powder, salt, and cinnamon.

Slowly add in dry ingredients to wet mixture and mix until dough forms.

Preheat the oven to 350°F.

Using a small cookie scoop, form dough into balls and roll in the remaining erythritol.

Place on a lined baking sheet and flatten with a fork.
