  • 1/2 cup unsalted butter, softened
  • 1/2 cup granular sugar substitute
  • 1 egg yolk
  • 1 tsp vanilla extract
  • 1 1/4 cups almond flour
  • 1/2 cup pecans, chopped


  1. Preheat oven to 325°F.

  2. Cream butter and sugar substitute in a large bowl.

  3. Beat in egg yolk and vanilla extract.

  5. Roll dough into small balls and place on a parchment-lined baking sheet.
