These light, airy meringue cookies are a perfect treat for those with diabetes.

  • 3 egg whites
  • 1 tsp of cream of tartar
  • 1 tsp of vanilla extract
  • 1/3 cup of granulated sweetener


  1. Preheat oven to 200°F (93°C).

  2. Beat egg whites until stiff peaks form.

  3. Add in cream of tartar and vanilla extract, continue beating until well combined.

  4. Slowly add in the sweetener while beating continuously until stiff peaks form again.

  5. Use a piping bag to pipe out the meringue mixture into desired shapes on a baking sheet lined with parchment paper.

  6. Bake in the preheated oven for 2 hours or until the meringues are dry and crispy.

  7. Let it cool before serving.
