Ingredients

  • 1 lb chicken breast, cut into bite-sized pieces
  • 2 tbsp olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 tbsp ginger, grated
  • 2 tbsp curry powder
  • 1 tsp cumin powder
  • 1 tsp paprika
  • 1/2 tsp turmeric
  • 1/2 tsp cinnamon
  • 1/4 tsp cayenne pepper
  • 1 cup low-sodium chicken broth
  • 1 cup canned diced tomatoes
  • 1 red bell pepper, chopped
  • 1/2 cup plain low-fat Greek yogurt
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium heat.

  2. Add onions and cook until soft, about 5 minutes.

  3. Add garlic and ginger and cook for another 1 minute.

  4. Add chicken, curry powder, cumin, paprika, turmeric, cinnamon, and cayenne pepper. Stir well to coat chicken evenly.

  5. Add chicken broth, tomatoes, and red bell pepper. Bring to a boil, then reduce heat to low and simmer for 30 minutes, stirring occasionally.

  6. Remove from heat and stir in Greek yogurt. Add salt and pepper to taste.

  7. Serve hot with brown rice or quinoa.
