  • 4 salmon fillets, cut into finger-sized pieces
  • 1 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/2 tsp garlic powder
  • 1/2 tsp dried dill
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup all-purpose flour
  • 2 eggs, beaten
  • Vegetable oil, for frying
  • 4 large potatoes, cut into chunky chips
  • Salt, to taste
  • 1 tbsp olive oil

Instructions

  1. Preheat the oven to 425°F (220°C). Place the chunky chips on a baking sheet, drizzle with olive oil, and sprinkle with salt. Toss to coat and spread them out in a single layer. Bake for 20 minutes or until golden and crispy.

  2. In the meantime, prepare the salmon fish fingers. In a shallow bowl, mix together the breadcrumbs, Parmesan cheese, garlic powder, dried dill, salt, and black pepper.

  3. Place the flour, beaten eggs, and breadcrumb mixture in separate bowls. Dip each salmon finger into the flour, then into the beaten eggs, and finally coat with the breadcrumb mixture, pressing gently to adhere.

  4. Heat vegetable oil in a large skillet over medium heat. Fry the salmon fish fingers in batches for about 2-3 minutes per side or until golden brown and cooked through. Transfer to a paper towel-lined plate to remove excess oil.

  5. Serve the salmon fish fingers with the chunky chips and optional dipping sauces like tartar sauce or ketchup.
