- 4 salmon fillets
- 8 slices of pancetta
- 2 tablespoons of olive oil
- 1 tablespoon of lemon juice
- Salt and pepper, to taste
- Fresh dill, for garnish
Instructions

Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.

Season the salmon fillets with salt, pepper, and lemon juice.

Wrap each fillet tightly with 2 slices of pancetta, pressing it gently against the salmon.

Heat olive oil in a large skillet over medium-high heat.

Sear the wrapped salmon, pancetta side down, for 2-3 minutes until the pancetta is crispy.

Transfer the salmon to the prepared baking sheet and bake for 12-15 minutes, or until the salmon is cooked through.

Serve the pancetta-wrapped salmon hot, garnished with fresh dill.
