  • 4 salmon fillets
  • 8 slices of pancetta
  • 2 tablespoons of olive oil
  • 1 tablespoon of lemon juice
  • Salt and pepper, to taste
  • Fresh dill, for garnish

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.

  2. Season the salmon fillets with salt, pepper, and lemon juice.

  3. Wrap each fillet tightly with 2 slices of pancetta, pressing it gently against the salmon.

  4. Heat olive oil in a large skillet over medium-high heat.

  5. Sear the wrapped salmon, pancetta side down, for 2-3 minutes until the pancetta is crispy.

  6. Transfer the salmon to the prepared baking sheet and bake for 12-15 minutes, or until the salmon is cooked through.

  7. Serve the pancetta-wrapped salmon hot, garnished with fresh dill.
