Ingredients

  • 4 white fish fillets (such as cod or halibut)
  • 8 slices of pancetta
  • 4 medium-sized potatoes, peeled and cut into wedges
  • 2 tablespoons olive oil
  • 2 cloves of garlic, minced
  • 1 lemon, zest and juice
  • Salt and pepper to taste
  • Fresh parsley, chopped for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. Wrap each fish fillet with 2 slices of pancetta.

  3. In a large bowl, toss the potato wedges with olive oil, minced garlic, lemon zest, salt, and pepper.

  4. Spread the potatoes on a baking sheet and roast in the preheated oven for 15 minutes.

  5. Place the pancetta-wrapped fish on the same baking sheet and drizzle with lemon juice.

  6. Return to the oven and bake for an additional 10 minutes or until the fish is cooked through and the pancetta is crispy.

  7. Remove from the oven and garnish with chopped parsley.

  8. Serve the pancetta-wrapped fish with the lemony potatoes.
