  • 16 large prawns, peeled and deveined
  • 8 slices of pancetta
  • 2 tablespoons of olive oil
  • Salt and pepper, to taste
  • Lemon wedges, for serving
  • Fresh parsley, for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. Wrap each prawn with a slice of pancetta and secure with a toothpick.

  3. Heat olive oil in a large skillet over medium-high heat.

  4. Add the wrapped prawns to the skillet and cook for 2-3 minutes on each side until the pancetta is crispy and the prawns are cooked through.

  5. Transfer the prawn spears to a baking sheet and place in the oven for an additional 3-4 minutes to ensure they are fully cooked.

  6. Remove from the oven and season with salt and pepper.

  7. Serve the prawn spears hot, garnished with fresh parsley and lemon wedges.
