  • 4 red mullet fillets
  • 4 slices of pancetta
  • 2 tablespoons of chopped fresh tarragon
  • 2 tablespoons of olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. Season the red mullet fillets with salt and pepper.

  3. Wrap each fillet with a slice of pancetta.

  4. Heat the olive oil in an oven-safe skillet over medium-high heat.

  5. Place the wrapped fillets in the skillet and cook for 2 minutes on each side until the pancetta is crispy.

  6. Transfer the skillet to the preheated oven and roast the fillets for about 10 minutes until cooked through.

  7. Sprinkle the chopped tarragon over the fillets and serve immediately.
