How To Make Mackerel Fishcakes Recipe

These fishcakes are a delicious and healthy option for any meal!

Ingredients

  • 2 large mackerel fillets, skin removed
  • 2 medium potatoes, peeled and diced
  • 1 medium onion, finely chopped
  • 2 garlic cloves, minced
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 egg, beaten
  • 1/2 cup breadcrumbs
  • 2 tbsp fresh parsley, finely chopped
  • 2 tbsp plain flour
  • 4 tbsp vegetable oil

Instructions

  1. Preheat oven to 180°C/350°F.

  2. Boil potatoes in a pot until soft, then drain and set aside to cool.

  3. In a pan, heat olive oil and sauté onion and garlic until translucent.

  4. Add mackerel fillets to the pan and cook for 2-3 minutes each side until browned and cooked through. Remove from heat and allow to cool.

  5. In a large mixing bowl, combine mashed potatoes, flaked mackerel, sautéed onions and garlic, beaten egg, breadcrumbs, parsley, salt and pepper. Mix well.

  6. Scoop mixture and form into small patties.

  7. Dust the patties in flour to coat evenly.

  8. Heat vegetable oil in a frying pan over medium heat until hot. Fry the patties until golden brown on both sides.

  9. Transfer the patties onto a baking sheet and bake in the oven for 5-7 minutes to cook through.
