  • 1 lb white fish fillets, cut into chunks
  • 1 tbsp olive oil
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 2 celery stalks, diced
  • 2 carrots, diced
  • 2 potatoes, peeled and cubed
  • 2 cups vegetable broth
  • 1 cup milk
  • 1 bay leaf
  • Salt and pepper to taste
  • Fresh parsley, for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion, garlic, celery, and carrots. Cook for 5 minutes until vegetables are softened.

  2. Stir in the potatoes, vegetable broth, and bay leaf. Bring to a boil, then reduce heat and simmer for 15 minutes until potatoes are tender.

  3. Add the fish fillets and milk to the pot. Cook for an additional 5-7 minutes until fish is cooked through.

  4. Season with salt and pepper to taste. Remove bay leaf.

  5. Serve the lighter fish chowder hot, garnished with fresh parsley.
