How To Make Lighter Fish Chowder

Ingredients
- 1 lb white fish fillets, cut into chunks
- 1 tbsp olive oil
- 1 onion, diced
- 2 garlic cloves, minced
- 2 celery stalks, diced
- 2 carrots, diced
- 2 potatoes, peeled and cubed
- 2 cups vegetable broth
- 1 cup milk
- 1 bay leaf
- Salt and pepper to taste
- Fresh parsley, for garnish
Instructions

Heat olive oil in a large pot over medium heat. Add onion, garlic, celery, and carrots. Cook for 5 minutes until vegetables are softened.

Stir in the potatoes, vegetable broth, and bay leaf. Bring to a boil, then reduce heat and simmer for 15 minutes until potatoes are tender.

Add the fish fillets and milk to the pot. Cook for an additional 5-7 minutes until fish is cooked through.

Season with salt and pepper to taste. Remove bay leaf.

Serve the lighter fish chowder hot, garnished with fresh parsley.
