Ingredients

  • 1 tbsp olive oil
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 1 tbsp curry powder
  • 1 tsp ground cumin
  • 1 can (13.5 oz) coconut milk
  • 4 cups fish stock
  • 1 lb white fish, cut into chunks
  • 2 large potatoes, peeled and diced
  • Salt and pepper, to taste
  • Fresh cilantro, chopped for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat.

  2. Add onion and garlic, cook until softened, about 3 minutes.

  3. Add curry powder and cumin, cook for another minute.

  4. Pour in coconut milk and fish stock, bring to a simmer.

  5. Add fish and potatoes, cook for 10-15 minutes or until the fish is cooked through and the potatoes are tender.

  6. Season with salt and pepper.

  7. Serve hot, garnished with fresh cilantro.
