How To Make Fondant Cupcakes

Delicious cupcakes topped with smooth and creamy fondant icing.

Ingredients

  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup milk
  • 1 lb fondant icing, any color
  • food coloring (optional)

Instructions

  1. Preheat oven to 350°F. Line a cupcake tin with paper liners.

  2. In a medium bowl, mix together flour, baking powder, and salt. Set aside.

  3. In a large bowl, cream butter and sugar together until light and fluffy. Add eggs one at a time, beating well after each addition. Mix in vanilla extract.

  4. Gradually add in flour mixture, alternating with milk, until batter is smooth.

  5. Pour batter into cupcake liners and bake for 18-20 minutes until a toothpick inserted in the center comes out clean. Transfer cupcakes to a wire rack to cool completely.

  6. Roll out fondant icing on a clean, flat surface and use cookie cutters to cut out shapes for decoration. Color fondant with food coloring, if desired.

  7. Place fondant shapes on top of cooled cupcakes and serve.
