Ingredients
- 36 ripe tomatoes, large, chopped
- 4 carrots, medium, shredded
- 2 sweet green peppers, large, or red peppers
- 4 celery stalks, diced, leaves included
- 2 white onions, diced
- 1 clove garlic, crushed
- ¼ cup lemon juice
- 2 tbsp honey, or agave syrup
- ½ tsp black peppercorns
- 2 bay leaves
- ⅓ cup fresh basil, dill, or thyme (optional)
For Garnish:
- 1 slice tomato
Instructions
- Combine all the ingredients in a large enamel or stainless steel pot, and simmer over low heat for 45 to 50 minutes, stirring occasionally, until the vegetables are soft.
- Strain the vegetables from the juice and serve.
