How To Make Vegan Panettone

Ingredients

  • 2 cups of all-purpose flour
  • 1/2 cup of cane sugar
  • 1/4 cup of vegan butter, melted
  • 1/2 cup of plant-based milk (such as almond or soy milk)
  • 2 tsp of active dry yeast
  • 1/4 tsp of salt
  • 1/2 cup of dried fruit (such as raisins or dried cranberries)
  • Zest of one lemon
  • 1/4 cup of almonds, chopped
  • Powdered sugar for dusting

Instructions

  1. In a small bowl, combine the yeast with 1/4 cup of warm water and let it sit for 5 minutes until it becomes foamy.

  2. In a large mixing bowl, combine the flour, sugar, and salt. Make a well in the center and pour in the melted vegan butter, plant-based milk, and the activated yeast mixture. Mix until the dough comes together.

  3. Transfer the dough to a floured surface and knead for about 10 minutes until smooth and elastic. Place the dough in a greased bowl, cover with a clean cloth and let it rise in a warm place for about 1 hour or until doubled in size.

  4. Preheat the oven to 350°F (180°C). Punch down the dough and fold in the dried fruit, lemon zest, and chopped almonds. Shape the dough into a round loaf and place it on a greased baking sheet. Cover and let it rise for another 30 minutes.

  5. Bake the panettone in the preheated oven for about 40 minutes or until golden brown and a toothpick inserted into the center comes out clean. Let it cool on a wire rack before dusting with powdered sugar.

  6. Serve the vegan panettone sliced as a festive dessert or enjoy it with tea or coffee.
