How To Make Smoked Chicken, Pot Barley & Cranberry Salad

Ingredients
- 2 smoked chicken breasts, shredded
- 1 cup pot barley
- 2 cups chicken broth
- 1 cup dried cranberries
- 1/2 cup chopped walnuts
- 1/4 cup chopped fresh parsley
- 1/4 cup olive oil
- 2 tbsp apple cider vinegar
- 1 tbsp Dijon mustard
- Salt and pepper to taste
Instructions

In a medium saucepan, bring the chicken broth to a boil. Add the pot barley, reduce heat to low, cover, and simmer for 45 minutes or until tender. Drain any excess liquid and let cool.

In a large bowl, combine the cooked pot barley, shredded smoked chicken, dried cranberries, chopped walnuts, and fresh parsley.

In a separate small bowl, whisk together the olive oil, apple cider vinegar, Dijon mustard, salt, and pepper. Pour the dressing over the salad and toss to combine.

Serve the smoked chicken, pot barley, and cranberry salad chilled or at room temperature.
