Ingredients

  • 8 eggs
  • 1 red bell pepper, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 1 small onion, thinly sliced
  • 2 tablespoons olive oil
  • Salt and pepper, to taste

Instructions

  1. Heat olive oil in a large pan over medium heat.

  2. Add the sliced bell peppers and onion to the pan. Cook for 5-7 minutes, until the vegetables are tender.

  3. Crack the eggs into the pan, spacing them evenly among the vegetables.

  4. Season with salt and pepper to taste.

  5. Cover the pan and cook for 8-10 minutes, until the eggs are cooked to your liking.

  6. Serve the one-pan eggs and peppers hot.
