Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 ripe bananas, mashed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup buttermilk
  • for the caramel glaze:
  • 1/2 cup granulated sugar
  • 1/4 cup heavy cream
  • 2 tablespoons unsalted butter
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a loaf pan.

  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.

  3. In a separate large bowl, cream together the butter and sugar until light and fluffy. Mix in the mashed bananas.

  4. Beat in the eggs one at a time, then stir in the vanilla extract.

  5. Gradually mix in the dry ingredients, alternating with the buttermilk, beginning and ending with the dry ingredients.

  6. Pour the batter into the prepared loaf pan and smooth the top.

  7. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.

  8. While the cake is baking, prepare the caramel glaze. In a small saucepan, mix together the sugar, heavy cream, and butter. Cook over medium-low heat, stirring constantly, until the mixture thickens and turns a golden brown color.

  9. Remove from heat and stir in the vanilla extract.

  10. Once the cake is done, remove it from the oven and let it cool in the pan for 10 minutes. Then transfer the cake to a wire rack to cool completely.

  11. Drizzle the caramel glaze over the cooled cake.

  12. Slice and serve.
