This sweet, delectable dessert is the perfect ender to any and every heavy meal! In fact, it’s great even as a stand-alone snack. Serves:

Ingredients

  • 1 pint of vanilla ice cream
  • 1/2 cup of mixed dried fruits (such as raisins, cranberries, and cherries)
  • 1/4 cup of mixed nuts (such as walnuts, almonds, and pecans)
  • 1/4 cup of rum or brandy
  • 1/2 cup of chocolate sauce
  • Whipped cream and Christmas sprinkles (for garnish)

Instructions

  1. In a small bowl, soak the dried fruits and nuts in the rum or brandy for at least 1 hour or overnight.

  2. Line a small bombe mold or a round bowl with plastic wrap, leaving some overhang for easy removal later.

  3. Soften the vanilla ice cream and mix in the soaked fruits and nuts.

  4. Spoon the ice cream mixture into the prepared mold, pressing it down firmly.

  5. Cover the top with plastic wrap and freeze for at least 4 hours or until firm.

  6. To serve, carefully remove the bombe from the mold by lifting it using the plastic wrap overhang and place it on a serving platter.

  7. Drizzle with chocolate sauce and decorate with dollops of whipped cream and Christmas sprinkles.

  8. Allow the bombe to sit at room temperature for a few minutes to slightly soften before slicing and serving.
