How To Make Christmas Pudding Ice Cream Bombe

- 2 cups Christmas pudding, crumbled
- 2 cups vanilla ice cream, softened
- 1 cup mixed dried fruits (such as raisins, currants, and candied peel)
- 1/4 cup brandy or rum
- 1/2 cup dark chocolate, melted
- Whipped cream, for serving
- Christmas sprinkles, for garnish

In a large mixing bowl, combine the crumbled Christmas pudding, softened vanilla ice cream, mixed dried fruits, and brandy or rum. Mix well until fully combined.

Line a 6-inch round bowl or pudding basin with plastic wrap, leaving overhang on all sides.

Spoon the ice cream mixture into the lined bowl, pressing it down firmly and smoothing the top. Fold over the plastic wrap to cover the top and freeze for at least 4 hours or overnight until firm.

Remove the frozen ice cream bombe from the bowl by lifting the plastic wrap. Place it on a serving plate.

Pour the melted dark chocolate over the bombe, allowing it to drizzle down the sides. Spread the chocolate evenly using a spatula.

Return the bombe to the freezer for 15-20 minutes to set the chocolate.

Before serving, remove the plastic wrap and decorate the bombe with whipped cream and Christmas sprinkles.
