How To Make Blackberry Queen of Pudding Pots

Ingredients
- 250g blackberries
- 50g granulated sugar
- 2 eggs
- 250ml milk
- 50g breadcrumbs
- 1 tbsp butter
- 1 tsp vanilla extract
Instructions

Preheat the oven to 180°C (350°F).

In a saucepan, gently heat the milk until steaming, but not boiling.

In a medium bowl, whisk together the eggs, sugar, and vanilla extract. Gradually pour in the warm milk, whisking constantly.

Divide the blackberries between four ramekins. Pour the custard mixture over the blackberries.

Place the ramekins in a large baking dish. Fill the dish with boiling water halfway up the sides of the ramekins.

Bake in the preheated oven for 20 minutes, or until the custard is set.

Meanwhile, in a small pan, melt the butter. Add the breadcrumbs and cook until golden brown.

Remove the ramekins from the oven and sprinkle the breadcrumb mixture over the top of each pudding pot.

Return to the oven for another 10 minutes, or until the breadcrumb topping is crispy.

Allow to cool slightly before serving. Serve warm or chilled.
