Ingredients

  • 1 cup of rice
  • 2 cups of water
  • 1 apple, diced
  • 1 cup of blackberries
  • 1/4 cup of honey
  • 1/4 teaspoon of cinnamon
  • 1/4 teaspoon of nutmeg
  • 1/4 cup of chopped almonds (optional for garnish)

Instructions

  1. In a saucepan, bring the water to a boil and add the rice. Cook according to package instructions until the rice is fluffy and cooked.

  2. In a separate skillet, heat the diced apple over medium heat until softened, about 5 minutes.

  3. Add the blackberries, honey, cinnamon, and nutmeg to the skillet with the apples. Stir well and let simmer for 2-3 minutes until the mixture becomes slightly syrupy.

  4. Once the rice is cooked, fluff it with a fork and transfer it to a serving dish. Pour the apple and blackberry mixture over the rice and gently mix to combine.

  5. Serve the Apple & Blackberry Rice warm, garnished with chopped almonds if desired.
