How To Make Blackberry Zabaglione

  • 4 egg yolks
  • 1/4 cup sugar
  • 1/4 cup blackberry puree
  • 1 tsp lemon zest
  • 1/4 cup fresh blackberries, for garnish


  1. In a heatproof bowl, whisk together the egg yolks and sugar until well combined.

  2. Place the bowl over a saucepan of simmering water, making sure the bottom of the bowl doesn’t touch the water.

  3. Continue whisking the egg mixture constantly until it becomes thick and pale, about 5-7 minutes.

  4. Remove the bowl from heat and whisk in the blackberry puree and lemon zest until well incorporated.

  5. Allow the mixture to cool for a few minutes, then divide it into serving glasses or bowls.

  6. Refrigerate for at least 2 hours, or until set.

  7. Before serving, garnish with fresh blackberries and a sprinkle of lemon zest.
