Lamb Meatball & Pea Pilaf Recipe

How To Make Lamb Meatball & Pea Pilaf

Ingredients

  • 500g ground lamb
  • 1/2 cup breadcrumbs
  • 1/4 cup finely chopped onion
  • 2 cloves of garlic, minced
  • 1/4 cup chopped parsley
  • 1 tsp ground cumin
  • 1/2 tsp ground coriander
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • 2 cups cooked rice
  • 1 cup frozen peas, thawed
  • 1/4 cup chopped mint
  • Lemon wedges for serving

Instructions

  1. In a bowl, combine ground lamb, breadcrumbs, onion, garlic, parsley, cumin, coriander, paprika, salt, and pepper. Mix well.

  2. Shape the mixture into meatballs, about 1 inch in diameter.

  3. Heat a large skillet over medium heat and add the meatballs. Cook until browned on all sides, about 8-10 minutes. Remove from the skillet and set aside.

  4. In the same skillet, add the cooked rice and peas. Cook for 5 minutes, until heated through.

  5. Stir in the chopped mint and season with salt and pepper.

  6. Serve the pea pilaf on a plate and top with the lamb meatballs. Garnish with lemon wedges.
