Ingredients

  • 4 slices of white bread
  • 4 tbsp of raspberry jam
  • 2 cups of milk
  • 1/4 cup of sugar
  • 2 eggs, separated
  • 1/4 tsp of vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a baking dish.

  2. Remove the crusts from the bread slices and cut into triangles. Arrange them in a single layer in the baking dish.

  3. Spread raspberry jam evenly over the bread slices.

  4. In a saucepan, heat the milk until hot but not boiling.

  5. In a mixing bowl, whisk together the sugar, egg yolks, and vanilla extract. Slowly pour the hot milk into the egg mixture while whisking continuously.

  6. Pour the milk mixture over the bread and jam, making sure all the bread is soaked. Press down gently with a fork to ensure even soaking.

  7. Bake in the preheated oven for 30-40 minutes until the pudding has set and the top is golden brown.

  8. While the pudding is baking, prepare the meringue topping. In a clean mixing bowl, whisk the egg whites until stiff peaks form.

  9. Gradually add the sugar while whisking, until the meringue is glossy and thick.

  10. Remove the pudding from the oven and spread the meringue over the top, covering the bread and jam completely.

  11. Return the pudding to the oven for an additional 10 minutes, or until the meringue is lightly golden.

  12. Allow the pudding to cool slightly before serving. Serve warm or at room temperature.
